Duck breast with crema and blueberry jus

Ingredients:

  • duck breast

  • Shallots, butter, rosemary

  • Blueberry Cream

  • Red wine or game stock

Preparation:
Roast the duck breast. Reduce a sauce made from shallots, stock, blueberry crema and a little red wine – this results in a deep, berry-flavored jus.
